Instant Pot Tomato Basil Soup

Ingredients:
- 8 cups washed
- cored
- cut and crushed tomatoes
- 1 1/4 cup diced celery
- 2 cups diced onion
- 1 clove garlic
- minced
- 1/3 cup fresh basil chopped
- 1 teaspoon sea salt
- 1/4 teaspoon ground black pepper
- 2-3 tablespoons brown sugar
Directions:
- Combine all ingredients except for the brown sugar into the Instant Pot liner. Place liner into the Instant Pot, lock lid and program for 12 minutes on manual/high pressure. Allow pressure to naturally release for 10 minutes then perform a quick release.
- Process mixture through a food mill or sieve to strain solids from soup. Thicken soup by using the sauté function on the Instant Pot, simmering on the stovetop or by adding a slurry of cornstarch or potato starch. Add 2 to 3 tablespoons of brown sugar to
